Easy Hungarian Goulash Soup

A hearty soup that is perfect for those snowy days!

Ingredients

  • 1 lb. cooked ground beef, drained
  • 3 lg. cans stewed tomatoes
  • 1 can tomato soup
  • 1 pkg. egg noodles
  • 1 lg. green pepper, sliced in strips, or chopped
  • 1 chopped onion
  • 1 tsp. dried parsley
  • 1 whole bay leaf
  • 3 Tbs. garlic powder
  • 1 tsp. poppy seeds(can be omitted)
  • 2 beef bouillon cubes dissolved in 2 cups water
  • salt and pepper to taste
  • 2 8 oz. pkgs. sour cream

Directions

In a large pot, combine all ingredients EXCEPT the sour cream. Simmer slowly for 20-30 minutes, add noodles and cook another 10 minutes until tender. Remove the bay leaf. Taste and adjust garlic and salt to taste, Stir in sour cream and serve.
