  • 2 chicken breast, sliced lengthwise (four pieces total)
  • ⅓ C. mayonnaise
  • ¼ C. fresh Parmesan, grated
  • 2 C. spinach
  • ¼ C. mozzarella shredded
  • 1 tsp. garlic, minced
  • Olive oil
  • Salt and pepper to taste

Preheat the oven to 425 degrees. Lay the chicken on a flat surface and pound it flat. In a large skillet, begin to saute the garlic with olive oil. After a few minutes, add in the spinach and saute until it begins to wilt. Remove the skillet from the heat after a few minutes. Stir in the mayo and cheeses so you have a spread. Season the chicken with salt and pepper on both sides. Spread a layer of the mixture onto each chicken and roll them. Place the chicken in the oven for 25-30 minutes until it’s cooked through. Let the chicken cool a few minutes before slicing it into rolls.
