  • 1 1/2 lb. lamb shoulder, trimmed and cut into 1-inch pieces
  • 4 carrots, chopped
  • 1 medium onion, chopped
  • 1/2 C. dried apricots, halved
  • 1/2 C. pitted green olives
  • 2 cloves garlic, chopped
  • 2 T. all-purpose flour
  • 1 tsp. paprika
  • 1 tsp. ground cumin
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • salt and pepper
  • 1 C. couscous
  • chopped cashews (optional for garnish)

Combine all ingredients except couscous and cashews in your crockpot. Add one cup of water and cook on low for eight hours, stirring occasionally. About ten minutes before serving, prepare couscous according to box directions. Top couscous with lamb stew and garnish with cashews.
