Easy Lemon Pie

I came up with this pie after my parents brought back 10 lb. of lemons from Florida. It is very, very cheap and easy. It is also very yummy.

Ingredients

  • 1 14 oz. can sweetened condensed milk
  • 1/2 C. fresh lemon juice
  • 1 tsp. grated lemon zest
  • 3 eggs, seperated
  • 1 8-inch prebaked pie crust
  • 1/4 tsp. cream of tartar
  • 1/4 C. sugar

Directions

Preheat oven to 325 degrees. In a bowl, combine the milk, lemon juice and lemon zest, then blend in the egg yolks. Pour the filling into the prebaked pie crust. Make the meringue by beating the egg whites with the cream of tartar until soft peaks form. Gradually beat in the sugar until stiff peaks form. Spread the meringue over the lemon mixture. Bake for 12-15 minutes or until meringue is golden.
