Easy Marinara Sauce

Ingredients
- 1 Tbs. olive oil
- 2 lg. garlic cloves, peeled and finely chopped
- 6 sm. tomatoes, skins and cores removed
- 1 tsp. dried basil
- 1/2 tsp. oregano
- 1/2 tsp. sugar
- 1 tsp. balsamic vinegar
- 1/4 tsp. salt
- pinch cayenne pepper
- freshly ground pepper
Directions
Skin and core tomatoes. Chop into half-inch cubes and set aside. In a large, non-stick skillet, heat olive oil on medium heat. Press garlic through garlic press into skillet. Sauté for a minute, being careful not to let garlic brown. Add rest of ingredients, and simmer on medium heat for 20 minutes. Remove from heat when sauce has thickened. For those who enjoy a smooth sauce, spoon sauce into blender and blend until smooth. Toss sauce with pasta or refrigerate to use later.
