Easy Minestrone

This is the most perfect soup to make on a cold day. It is packed full of fresh veggies and it tastes so good.

Ingredients

  • Tomato juice - 1 large can (about 46 oz)
  • Diced tomatoes - 1 can large or 2 cans small
  • Onion - 1 medum to large
  • Chopped Garlic - 2 or 3 cloves
  • Smashed and diced Spinach - 1 package frozen
  • Chopped Carrots - 1 can (or 1 C. frozen)
  • Kidney Beans - 1 can
  • Garbanzo beans (chick peas)
  • 1 can Mushrooms
  • I can Elbow Macaroni - 8 oz uncooked
  • Salt/pepper to taste

Directions

Spray the bottom of the soup pot with Pam and sauté the chopped onion and diced garlic until soft. Add the tomato juice and diced tomatoes and heat until boiling. Add the dry macaroni and boil 5 minutes. Add the package of frozen chopped spinach and reduce heat. Simmer 15-20 minutes, stirring every now & then to break up the spinach. Add the canned carrots, kidney beans, chick peas and mushrooms. Don't let it boil - your beans will split and your macaroni will be mushy (but it's still good like that if you do accidentally boil!) Salt to taste. (I add garlic salt to taste because we're garlic fiends). Serve with good Italian or French bread.
