  • 1 lb. fresh mushrooms
  • 2 tsp. butter
  • 1/2 lb. macaroni shells, cooked according to package directions
  • 1 can condensed mushroom soup
  • 1/4 C. fresh parsley, chopped
  • 1/4 tsp. thyme, crushed
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. Parmesan cheese, grated

Preheat oven to 350 degrees F. Rinse, pat dry and slice fresh mushrooms. In large skillet, melt butter. Add mushrooms. Sauté mushrooms for about 4 to 5 minute or until golden brown. In a 2 qt. casserole, place mushrooms, macaroni shells, mushroom soup, parsley, thyme, salt and pepper. Mix thoroughly. Top with grated cheese. Cover and bake for 35 to 40 minutes. Garnish with chopped parsley.
