  • Crust:
  • 10 whole graham crackers
  • 6 Tbs. butter, melted
  • 1/3 C. brown sugar
  • Filling:
  • 2 C. whole milk
  • 1 (4.6 oz.) pkg. vanilla cook and serve pudding
  • 1 C. pumpkin puree
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. ground ginger
  • Dash of ground cloves

To make the crust, crush the crackers in a food processor until fine crumbs form. Add in the brown sugar and melted butter. Mix until a wet sand consistency has formed and press it into the bottom of an 8x8 baking dish. Chill the crust while preparing the filling.

In a medium pot, bring the milk to just a boil over medium high heat. Mix in the pudding and stir with a whisk until the mixture thickens. Turn the heat down to low and mix in the pumpkin puree until smooth. Stir in the cinnamon, salt, ginger, and cloves. Pour the pumpkin filling onto the crust and smooth out the crust. Chill for 3 hours, or until the filling is firm.
