  • 1/4 lb. feta cheese
  • 1 large loaf of bread or 4 slices of garlic bread
  • 1 cup pitted fresh black olives or preserved, brined olives
  • 1/2 teaspoons black pepper
  • 3 large tomatoes, sliced into cubes after deseeding
  • 2 large onions, cubed and 1-inch cubes
  • 1 bunch fresh basil leaves
  • Dressing Ingredients:
  • 1 cup olive oil
  • 2 teaspoons balsamic vinegar or red wine vinegar
  • Salt
  • Pepper

1. Cube the bread and toast gently. Season with salt and pepper and set aside to cool

 2. In a large bowl, place the other ingredients and toss in the bread cubes

3. Pour the dressing over and serve immediately.
