Easy Peanut Butter Thumbprint Cookies

- 1 C. peanut butter
- 1+1/4 C. sugar
- 30 chocolate kisses, unwrapped
- 1 egg
- 1 tsp. vanilla extract
Mix peanut butter, one cup sugar, egg, and vanilla together in a mixing bowl. stirring well.
Place dough in fridge, and refrigerate dough for about 45 minutes.
While waiting for dough to chill, line cookie sheets with parchment paper, and pour 1/4 cup sugar into a small bowl and set aside.
After dough has been chilled, roll into small tablespoon sized balls, then roll around in small sugar bowl.
Place on parchment lined cookie sheets, but do not flatten dough balls.
Bake at 350 degrees Fahrenheit for about 10 minutes.
After removing from oven, immediately place a chocolate kiss in the center of each cookie, and gently push down.
Allow to cool slightly, then transfer to a cooling rack to finish cooling.
