  • 3 C. pears, cored and chopped
  • 1 C. fresh cranberries
  • ¾ tsp. ground cinnamon
  • ¾ C. packed brown sugar
  • ½ C. old-fashioned oats
  • ⅓ C. butter, softened
  • ¾ tsp. ground nutmeg
  • ½ C. all purpose flour
  • ½ tsp. vanilla
  • Pinch of ginger

Preheat the oven at 375 degrees. Spray the bottom of a baking dish with a non-stick spray. Blend the pears and cranberries and layer it on the bottom of a baking dish. In a medium sized bowl, mix together the brown sugar, oats, flour, cinnamon, ginger, nutmeg, vanilla and butter until it’s thoroughly mixed. Dust the mixture you just created over the pears and cranberries. Bake it for 30 minutes or until it’s golden brown. The pears and cranberries should be tender when pricked with a fork. Serve with vanilla ice cream, if you prefer.
