I always love a good bowl of potato salad. Soft potatoes smothered with a perfectly seasoned dressing and added vegetables are definitely the way to go. Great as a side or a grab and go meal.

  • 1 lb red potatoes; cut cubes
  • ¼ C mayonnaise
  • 2 Tbs vinegar
  • 1 red onion; sliced
  • 1 tomato; diced
  • 1 sweet yellow pepper; diced
  • ¼ C sliced green olives; garnish
  • Chopped parsley
  • Salt
  • Pepper
  • Dried Dill seasoning

Boil the potatoes in a large pot and add in a little salt. Cook for about 10 minutes or until tender. Allow to steam dry and set aside.
In a bowl, add in the mayonnaise, vinegar, dill, salt and pepper until well combined.

Then, toss in the onions, tomato and yellow peppers. Finally add in the warm potatoes and toss until everything is well coated.

Refrigerate before serving.

*When serving, top it with some sliced green olives and chopped parsley.
