Easy Potatoes with Parsley

- 2 lbs. sm. new potatoes, unpeeled and quartered
- 1/4 C. vegetable oil
- one 1.3-oz. pkg. ranch dressing mix
- 1/4 C. fresh parsley, chopped
Place potatoes, vegetable oil, dressing mix, and 1/4 cup water in a 4- to 5-quart slow cooker. Toss to coat potatoes. Cover and cook on low for 3-4 hours or until potatoes are tender. When ready to serve, sprinkle parsley over potatoes and toss.
