  • 1 large sweet potato
  • ¼ C. bacon
  • ½ cooked chicken breast, chopped
  • 4 T. cheese, shredded
  • 2 T. maple syrup
  • ½ C. uncooked quinoa
  • Salt
  • Pepper

Preheat the oven to 400 degrees. Wash the potato and pierce it a few times with a knife or fork. Cook the potato until it is softened for about an hour. While this is taking place cook the quinoa as the package instructs. Once the potato is cooked, take out the inside of the potato and place it into a bowl. In the bowl you should have the inside of the potato. Mix it with maple syrup, quinoa, bacon, and the chopped chicken. Spoon the mixture back into the potato skin. When ready to serve sprinkle the shredded cheese on top. Enjoy!
