  • 1 large Yellow or White Onion, chopped
  • 1 lb Ground Beef
  • Kosher Salt & Freshly Ground Black Pepper, to taste
  • 2 tbs Chili Powder
  • 1 tsp Ground Cumin
  • 1 can Pinto Beans, drained & rinsed
  • 1 can Green Chiles
  • 1 can Petite Diced Tomatoes, drained
  • 1-2 C Cooked Spanish Rice, prepared according to package
  • 2 C Mexican Cheese Blend

Begin this recipe for easy rice and beef cheesy skillet by heating a large skillet over medium-high heat. Once your pan is hot, add the ground beef, stirring occasionally until no longer pink. Season your beef with salt, pepper, chili powder, and cumin.

Once your beef is browned, stir in your rinsed pinto beans, green chiles and drained diced tomatoes. Let cook for about five minutes before stirring in your cooked Spanish rice. Toss the pan well to combine all ingredients and then turn on your broiler.

Taste the pan for salt and pepper and then top with your cheese. When your broiler is hot, set the skillet inside for about two to three minutes or until your cheese is melted.

Serve this skillet as an appetizer with tortilla chips, a main course as taco or burrito filling, or enjoy it as is in all of its beefy and cheesy glory.
