Easy Roasted Potatoes

Ingredients
- 1 1/2 lbs. potatoes
- 1 lb. mushrooms, halved
- 1/4 C. olive oil
- 2 garlic cloves, thinly sliced
- salt
- pepper
- 2 Tbs. chopped parsley
Directions
Preheat oven to 400 degrees. Scrub potatoes with a brush under cold water. Peel them. Cut potatoes into 1-inch pieces. Place the potatoes and mushrooms in a large roasting pan. Toss vegetables with the oil, garlic and salt and pepper to taste. Roast vegetables for 15 minutes. Toss and bake for another 30 minutes. Stir occasionally. Sprinkle with parsley and serve.
