Ingredients

  • 1 tbs. extra virgin olive oil
  • ½ C. yellow onion, chopped
  • ½ C. red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 C. instant white rice
  • 1 1/3 C. chicken broth
  • ½ tsp. dried thyme
  • ¼ tsp. kosher salt
  • ¼ tsp. ground black pepper
  • 1/8 tsp. saffron
  • 1 lb. shrimp, peeled and deveined
  • 1 pound mussels, scrubbed

In a large skillet, warm olive oil over medium heat. Add onion, red pepper and garlic. Cook and stir for 3 minutes or until tender. Mix in rice, chicken broth, thyme, salt, ground pepper and saffron. Bring mixture to a boil. Cover and cook for 5 minutes.

Add shrimp to skillet and stir to combine. Spread rice over skillet in an even layer and top with mussels. Cover and cook for 5 minutes or until mussels have opened. Remove and discard any mussels that have not opened.

Remove skillet from heat. Cover and let sit at room temperature for 5 minutes or until liquid has been absorbed. Serve warm.
