A Middle Eastern recipe that's hard to resist! This spicy and saucy poached egg recipe is done in under 45 minutes and is great for any meal.

  • 3 tablespoons canola oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 jalapeno, seeded and chopped
  • 7 cloves garlic, minced
  • ¼ cup tomato paste
  • 20oz crushed tomatoes, well drained
  • 1 can condensed tomato soup
  • 1 bay leaf
  • 2 teaspoons sugar
  • 1½ teaspoons salt
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 2 teaspoons pepper
  • 1/2 cup parsley, chopped
  • 9 eggs

Heat the oil in a large skillet, add the onion and sauté until translucent. Add the bell pepper and jalapeno and sauté until softened. Add garlic and tomato paste. Cook for 2 minutes and then add soup and crushed tomatoes. Stir in the bay lead, sugar, salt, paprika, cumin and pepper. Let Simmer for 20 minutes. Toss in the parsley and crack in the eggs over the tomato mix. Cover and simmer for 10 minutes, or until the eggs are no longer translucent. Serve with the eggs with tomato sauce.
