  • 8 plum tomatoes
  • 1/4 C. olive oil
  • 2 garlic cloves, finely chopped
  • 2 Tbs. chopped fresh basil
  • 1 pinch salt
  • 1 pinch pepper

Cut around the stem end of each tomato with a knife and remove it. Cut tomatoes in half lengthwise. In a skillet, heat oil with garlic and basil over medium heat. Add tomato halves cut-side down. Sprinkle with salt and pepper. Cook until tomatoes are browned and tender, 10 minutes. Serve.
