Ingredients

  • 2 lbs. of beef, trimmed and cut
  • 1 T. olive oil
  • 1 can of whole tomatoes
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 1 C. frozen peas
  • 20 mini potatoes, chopped
  • ½ C. flour
  • 3 C. beef broth, divided
  • 1 ribs celery, chopped
  • 4 carrots, chopped
  • 2 onions, chopped
  • 1 ½ tsp. Italian seasoning
  • 2 bay leaves

Directions

Heat the olive oil in a saucepan and lightly brown the beef. Meanwhile, add the rest of the ingredients into a slow cooker, expect for the peas. Add in the lightly browned beef. Let it cook on low for 8-10 hours. Add in the peas 20 minutes before it’s done. Serve and enjoy.
