These are just perfect snacks which are meant to go down well with any kind of drink. You can prepare them ahead of any cocktail party and still enjoy the crunchy taste. Just make sure that your spicy peanuts are kept at room temperature in a tightly covered container.

  • 2 C. peanuts, roasted
  • 3 tbs. olive oil, for frying
  • 1 tbs. red pepper flakes, crushed
  • 1 tsp. sugar
  • 2 tsp. Salt, for seasoning
  • 1 tsp. rice flour
  • 1 tsp. garlic cloves, minced
  • 2 tsp. chili powder

Heat a portion of oil over medium heat in a heavy skillet. Add garlic, pepper and sugar, then stir until you smell fragrance.  The peanut are then added and stirred to make a coat before adding salt for seasoning.

The remaining oil is then heated in a pan. Deep fry spicy peanuts in medium flame as you take care not to let them stick. Drain them on some paper towel then transfer to a larger bowl and sprinkle chili as this adds more spice to the peanuts.  Leave to cool and keep in an airtight container so as to retain the crunchiness.
