  • 1 lb. ricotta cheese
  • 1/2 C. Mozzarella cheese, shredded
  • 1/2 C. Parmesan cheese, freshly grated
  • 1/2 pkg. frozen spinach, thawed and drained
  • 1 tsp . garlic salt
  • 3 large eggs, lightly beaten
  • 2 C. Italian Bread Crumbs

Fill a medium skillet with a little olive oil and warm up over medium high heat. In a bowl, mix cheeses and spinach. Combine garlic salt. Set up a breading station with one bowl for eggs and another plate with crumbs. Make cheese mixture into 2 inch balls. Pat down to a patty. Dip in bread crumbs then egg mixture and then bread crumbs again. Place in freezer for 10 minutes. Preheat oven to 350 degrees F. Place 3 to 4 fritters in oil and fry for 1 to 2 minutes. Turn over and cook for 1 to 2 minutes. Place fritters on baking sheet and bake for 15 minutes.
