Easy Strawberry-Fig Jam
- 3 1/2 C. mashed fresh figs, peeled
- 3 C. sugar or Splenda
- 1/4 C. lemon juice
- 3 3 oz. packages strawberry Jell-O (regular or sugar-free)
Cook figs, sugar (or Splenda) and lemon juice 5 to 7 minutes. Let stand overnight. Stir in Jell-O and bring to a boil and boil 3 to 4 minutes, stirring frequently. Ladle into sterilized jars leaving 1/4-inch head space. Remove air bubbles. Wipe rims. Cap and seal. Process in a water bath canner for 10 minutes.
Yield: 6 half-pints
