Easy Stuffed Peppers

If you like stuffed peppers but hate all the work, try this easy version. You can mix it up and have it in the oven in about 15 minutes.

Ingredients

  • 2.5 lbs. of ground beef
  • 1 box Spanish Rice Rice-A-Roni
  • 4 whole green peppers, cut in half lengthwise
  • 1 can tomato Juice

Directions

Mix the uncooked ground beef with the Rice-a-roni and seasoning packet. Clean the peppers and cut in half lengthwise. Stuff with the hamburger rice mixture, and put in large roaster. Pour 1 can of tomato juice over the top and bake at 350 degrees for 1 1/2 to 2 hours, covered.

  • I loved these peppers. The quickest and best peppers without all the work. I did add a little additional garlic salt and Worcestershire sauce and also put a little of the tomato juice in my meat mixture but basically followed this recipe as is and it was great. I will be making this again very soon. Cook 6 hours in my slow cooker.

  • This is kinda like mine except I use V8 juice. It gives more flavor than plain tomato juice. Though it does not specify, I cook the Rice-a-Roni and mix it with the raw ground meat once it cools enough to touch.

  • This is very easy and delicious. I did add a can of diced tomatoes, a little garlic powder and worcestershire sauce. This recipe is a keeper.
