Easy Sweet Potato Soup Recipe

With Thanksgiving looming around the corner, I look for something new to make for dinner and try it out ahead of time - I liked this sweet potato soup. Found this one on another website. Sounds warm, creamy and good. I would substitute fat free evaporated milk to lessen calories and make it in the slow cooker.

  • 1 Tbs. flour
  • 1 Tbs. unsalted butter
  • 1 1/2 C. chicken broth (or vegetable broth, if desired)
  • 1 Tbs. light brown sugar
  • 1 1/2 C. cooked sweet potatoes
  • 1/4 tsp. ground ginger
  • 1/8 tsp.ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1 C. milk
  • salt

In a heavy saucepot, over medium-low heat, cook the flour and butter, stirring constantly until roux achieves a light caramel color. Add the broth and brown sugar, bring to a boil, then lower to a simmer. Stir in the cooked sweet potatoes and spices, bring to a simmer again, and cook for 5 minutes more. In a blender, puree the soup in batches and return to saucepot. Add the milk, and reheat soup. Season with salt and pepper, ladle into warm soup bowls and serve.

  • You are so right about this being quick and easy, but I prefer to emulsify the sweet potato pulp after microwaving and cooled with some water, then of course use the fat free condensed milk....... and try adding some yellow curry powder, not much, but so great. I used to make my own curry powder, but it is cheaper to just find a good Asian Market. I find the best already made curry powder at the Hung Thinh Store.

  • I made this last night, came out great! Don't bother with slow cooker, it goes together too quick for that! This came out o creamy and delicious, Enjoy!
