  • 1 sm. yellow onion
  • 1 garlic clove
  • 1/4 head lettuce
  • 8 corn tortillas
  • 1 1/2 lbs. ground beef
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tsp. chili powder
  • 2 C. canned tomato sauce
  • 1/2 C. vegetable oil
  • 1/2 C. grated cheddar cheese

Peel onion and chop into 1/4-inch pieces. Peel and mince garlic. Shred lettuce. cut tortillas into 1/2-inch-wide strips.  Crumble ground beef into large frying pan and brown over medium heat.  Pour off excess fat.  Add onion and garlic and cook for about 5 minutes longer, until the onion is soft. Stir frequently.  Stir in the salt, pepper, chili powder, and tomato sauce, and continue cooking over low heat for about 15 minutes longer. Stir frequently.  In a separate frying pan, heat vegetable oil to medium-high.  Fry tortilla strips until crisp. Transfer to paper towels to absorb excess grease.  Stir tortillas strips into meat mixture and cook for about 5 minutes, stirring frequently. Sprinkle with cheese. As soon as the cheese melts, remove from heat.  Top with shredded lettuce and serve immediately.
