Easy Tortellini Soup

This soup has an Italian feel. It tastes very much like a hearty spaghetti dish would, but much more warming. I made this one day when I thought I had seen or heard of a soup that was made with tortellini, but when I searched for it, it never seemed to be the right mixtures. So I put this together by what I thought should be in it. I make it for large groups and it is always the empty pot first. I'm always asked for the recipe, and it's great with a slice of garlic bread!

Ingredients

  • 1 Tbs. canola oil
  • 1-2 lb. ground beef or Italian sausage
  • 1 onion, chopped
  • 1 Tbs. minced garlic
  • 1-2 stalks celery, chopped
  • 1 can sliced mushrooms
  • 1 can sliced black olives
  • 2 32-oz. boxes beef broth
  • 2 jars spaghetti sauce with mushrooms
  • 1 family-sized pkg. 3 or 4 cheese tortellini
  • salt and pepper to taste
  • parmesan cheese

Directions

In a large stew pot, spray non-stick spray or a small amount of oil to brown ground beef or Italian sausage on medium/high heat. When browned, add chopped onion, garlic and celery. When onion is clear in appearance, add beef broth, spaghetti sauce, mushrooms and black olives. Heat until simmering, add tortellini. Simmer until pasta is done, approximately 15 minutes. Top each serving with a sprinkle of Parmesan cheese.
