Easy Tortilla Casserole

This is an easy and scrumptious comfort food. The Mexican flavor combines with the cheesy and crunchiness of the tortilla chips that just makes your mouth happy! I always have to make a double recipe when my sons are going to eat with us because they just love it!

  • 1 1/2 lb. ground beef
  • 1/4 C. minced onion
  • 1 tsp. garlic powder
  • 1 tsp. ground cumin
  • 1 8-oz. jar taco sauce
  • 1 can cream of mushroom soup
  • 1 soup can of milk
  • 1 sm. can chopped chilies
  • 10 oz. shredded cheddar cheese
  • 1 7.5-oz. bag Nacho Cheese tortilla chips

Brown ground beef with onion, garlic powder and cumin. You can drain the ground beef but you will lose a lot of the flavor, your choice. Add taco sauce, chilies, soup and milk; heat thoroughly. Layer in a 13x9-inch casserole dish: half of the meat mixture, tortilla chips and cheese. Add a second layer of the meat mixture, tortilla chips and cheese. Bake at 350 degrees until the cheese is bubbly and hot. Serve with sour cream, refried beans and Spanish rice if desired.
