Easy Veggie Peanut Chicken

A very easy "peanut chicken" dish for vegetarians! Serve with rice or noodles.

Ingredients

  • 1 pkg. vegetarian imitation chicken (Boca Chik'n), or real chicken for non-vegetarians
  • 1/4 C. soy sauce
  • 1/4 C. honey
  • 2 Tbs. chili sauce
  • 4 Tbs. smooth peanut butter
  • 2 Tbs. butter, melted
  • 1 pkg. ramen noodles or jasmine rice

Directions

In a sauce pan, add butter, soy sauce, peanut butter, chili sauce, and honey. Cook on low until blended. Put chicken patties in an 8x8-inch shallow baking dish in a single layer. Pour peanut sauce over them and cover with foil. Bake on low heat about 250 degrees for about 20-30 minutes. The sauce will absorb a little and still have some on top for dipping.  Serve over the rice or noodles.
