Easy Zucchini

This scrumptuous zucchini dish is not only good for you, it's a bit spicy and with the addition of parmesan cheese, it melts in your mouth.

  • 1 large onion, chopped
  • Celery, about 3 inches of the tops of a head of celery with leaves, chopped
  • Minced garlic if desired
  • 4 Tbs. extra virgin olive oil, enough to cover the bottom of a pan
  • 1 jar roasted red peppers, chopped
  • 4 medium zucchini, chopped
  • 1 can RO*TEL Original diced tomatoes and green chilies
  • 1-2 Tbs. dried basil
  • 1 Tbs. oregano
  • Salt and pepper
  • Freshly shredded Italian 4 cheese blend (CASARO) parmesan, asiago, romano & aged provolone cheeses

Saute onion and celery in olive oil until soft. Add jar of roasted red peppers. Add zucchini. Add diced tomatoes and green chilis. Add basil, oregano, salt and pepper. Cook, covered, until zucchini is still firm to the bite. Spoon a layer of zucchini into separate bowls. Add a layer of Italian 4 cheese blend. Add another layer of hot zucchini mixture.
