  • ½ ripe avocado
  • 2 eggs
  • 1 tablespoon olive oil
  • 2 slices toast
  • 2 tablespoons crumbled feta
  • Salt and pepper
  • 3 halved cherry tomatoes

Seed and peel the avocado. Then mash the avocado using a fork. Heat the olive oil in a skillet over medium-high heat. Cook the eggs until they are set and then remove them from heat. Spread half the mashed avocado on each slice of toast and season with salt and pepper. Top each with a fried egg and sprinkle with halved cherry tomatoes and feta.
