If you have never made egg fu yung before, don't worry- this is a quick and easy recipe that you will have fun making.

Serving Size / Yield

4-5 servings

Ingredients

  • 6 eggs
  • 1/2 C. canned crab meat or shrimp
  • 2 oz. ham, shredded
  • 3 dry black mushrooms, soaked and shredded
  • 1 C. bean sprouts
  • 1/3 C. green onion, shredded
  • 1 Tbs. soy sauce
  • 2 tsp. salt
  • 1/2 C. chicken broth
  • 8 Tbs. oil

Directions

Beat eggs until foamy. Add 1 teaspoon salt and chicken broth, then mix again. Heat 6 tablespoons of oil in frying pan. Stir-fry crab, ham, mushrooms, bean sprouts, and green onion. Add soy sauce and salt. Stir-fry about 1/2 minute over high heat. Splash 2 tablespoons oil down side of pan and add first egg mixture. Fry on both sides until golden. Remove to a plate and serve.
