A healthy and fresh salad to make for lunch, just have hard boiled eggs, fresh mozzarella cheese and tomatoes handy.

  • 4 C. torn salad greens
  • 4 hard-cooked eggs, sliced
  • 3 oz. thinly sliced Canadian mozzarella cheese or 4 slices processed mozzarella cheese
  • 4 tomatoes, sliced
  • Black olives (optional)
  • 1/3 C. herb vinaigrette

Divide salad greens among 4 dinner plates. Arrange egg, cheese and tomato slices on top of lettuce, overlapping slices. Garnish with black olives. Drizzle dressing over top. Serve immediately.
