Eggless Tofu Quiche
- 1 ½ Tbs. olive oil
- 1 ½ C. chopped onion
- 2 garlic cloves, minced
- One 16-oz. tub silken tofu, drained and crumbled
- 1 tsp. curry powder
- vegetables and embellishments of your choice
- salt and pepper to taste
- wheat germ
Preheat over to 350 degrees. Grease 9-inch quiche pan or nonstick pie plate.
Heat oil in skillet. Add onion and garlic and sauté until onion begins to brown. Remove from skillet. Put half of the onion mixture in a food processor along with tofu and curry powder. Process until smooth.
In a bowl, combine tofu puree with remaining onion mixture. Add vegetables and embellishments. Season with salt and pepper and mix well.
Sprinkle bottom of pan with a generous layer of wheat germ. Pour in tofu mixture and pat down. Top with another sprinkling of wheat germ.
Bake for 40 minutes, or until set. Let stand for 10 to 15 minutes, then serve.
