Ingredients

  • Eggnog cream:
  • 3/4 C. all-purpose flour
  • 3 C. eggnog
  • 5 egg yolks
  • 1 1/2 Tbs. butter, softened
  • 1 1/2 tsp. rum extract
  • 1 1/2 tsp. vanilla extract
  • Gingerbread cream:
  • 4 Tbs. butter, unsalted and softened
  • 2 tsp. ginger
  • 1 C. powdered sugar
  • Other toppings:
  • Raspberries
  • Blueberries

Directions

For eggnog cream, heat saucepan over medium heat. In a mixing bowl, place flour. Whisk in eggnog until smooth. Add egg yolks, one at a time, until combined. Pour in saucepan and cook while stirring constantly until thickened. Remove from heat and stir in butter. Add rum and vanilla. Chill overnight.


For gingerbread filling, mix ingredients with electric mixture until smooth. Layer parfait with eggnog cream, gingerbread cream and berries.
