  • 2 eggplants, thickly sliced
  • 4 tsp. olive oil
  • 2 large ripe tomatoes, thickly sliced
  • 8 slices mozzarella cheese
  • 1 tsp. basil
  • 1 tsp. thyme
  • salt and pepper to taste

Preheat your oven to 350°F and line a baking dish with parchment paper. Arrange eggplant slices in prepared baking dish, drizzle with half of the olive oil, and bake for 15 minutes. Layer baked eggplant with tomato and mozzarella slices. Drizzle with remaining olive oil and sprinkle with seasonings. Return to oven and bake for an additional 10 minutes. Remove and let stand for 10 minutes before serving.
