  • 3 eggplants, sliced
  • 2 eggs, beaten
  • 2 c. of bread crumbs
  • 5 c. of marinara sauce
  • 2 c. of mozzarella cheese
  • 1.2 c. of parmesan cheese
  • 1 tsp of basil

Dip eggplant slices in egg, the in bread crumbs. Spread marinara sauce in the bottom of baking dish. Place a layer of eggplant slices in the sauce, sprinkle with mozzarella and parmesan cheese. Sprinkle basil on top, and bake for 35 minutes at 350 degrees, until golden brown. Serve.
