Eggplant Tostada Slices
Ingredients
- 4 medium flour tortillas
- 1 C. eggplant garlic spread
- 1 C. chopped tomatoes
- 1/2 C. crubmled feta cheese
- 1 Tbs. chopped parsley
Directions
Preheat oven to 400 degrees. Spread eggplant spread over tortillas, top with tomatoes and feta cheese, and place on a baking sheet. Bake for about 10 minutes, or until golden. Garnish with parsley, cut into pizza-like slices, and serve.
