Serving Size / Yield
- 4 thin slices boiled ham or Canadian bacon
- 1 Tbs. butter
- 2 hot, split, toasted, and buttered English muffins
- 4 poached eggs
- 1 C. Hollandaise sauce (hot)
Lightly brown ham in butter over moderate heat. Arrange on muffins, trimming to fit. Top with eggs, cover with sauce and serve.
