Only four ingredients are required to create this thin, cake-like Irish bread cooked to perfection in a griddle. Serve it warm with butter and jam at breakfast, or garnish with kosher salt and green onions for a side dish at dinner.

  • 8-10 New Potatoes
  • 1 tsp. Sea Salt
  • 1 Tbs. Butter
  • 1 C. All Purpose Flour

Peel and boil potatoes. While potatoes are still hot, mash them with salt and butter. Gradually add flour to potato mixture until a soft dough forms. Place the dough onto a floured surface and knead for about 1 minute. Roll dough into a 9" circle, about 1/4" thick. Cut circle into 6 to 8 wedges. Grill in a hot, greased griddle or pan until well-browned on both sides, and serve.
