  • 1lb chicken, cooked and shredded
  • 1 can condensed cheddar cheese soup
  • 1 onion, chopped
  • 1 can refried beans
  • 12 flour tortillas
  • 2½ cups enchilada sauce
  • ½ cup cilantro, chopped
  • ¾ cups mozzarella cheese, shredded

Preheat the oven to 350F. Pour half the enchilada sauce into a baking dish. Spread the beans onto the center of the tortillas. Add chicken, onion and soup into a saucepan and cook until heated through. Spoon this meat mix onto the tortillas, roll and place the enchiladas into the baking dish. Pour the remainder of the enchilada sauce over the top and sprinkle the cheese over the top. Bake for 20 minutes or until bubbling and the cheese has melted.
