Enchilada Pie

My mom got this recipe from a friend while the friend was living in South America. You can make it hot or mild.

Ingredients

  • 1 lb. hamburger meat
  • 1 can cream of mushroom
  • 1 can cream of chicken
  • 1 can enchilada sauce, mild
  • Tostitos, plain
  • American cheese slices as desired
  • 1 medium onion, diced
  • 1 C. milk

Directions

Brown meat with onion, drain off grease. Add cream of mushroom, cream of chicken, enchilada sauce, milk. Let simmer for 5 minutes to let ingredients meld. Meanwhile, crush chips in casserole dish. Add meat mixture and stir, place cheese on top and bake at 350 degrees until cheese melts.

To make a hotter version,  leave out milk, switch mild enchilada sauce for hot, and add sliced jalapeno peppers and juice. Follow directions as is.
