  • 1 1/2 C. milk
  • 1 1/4 C. quick-cooking oats
  • 1 1/2 C. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 egg
  • 1/2 C. brown sugar, packed
  • 1/4 C. butter, melted
  • 2 tsp. vanilla
  • 1/2 tsp. lemon rind, grated

Directions

Preheat the oven to 400 degrees, and lightly butter a 12-slot muffin pan. Mix the oats and milk in a bowl, and allow to stand for 5 minutes. In another bowl, mix the dry ingredients.

Add the egg, brown sugar, butter, vanilla, and lemon to the oats and mix well. Pour this mix over the dry ingredients, and mix until moist. Spoon into muffin tins and bake for 30 minutes or until firm to the touch.
