English Raspberry Squares

The buttery crust of these delicious bars is perfect with the raspberry topping.

  • 1 C. brown sugar
  • 1 1/4 C. flour
  • 1 C. oats
  • 1/4 tsp. salt
  • 6 oz. butter
  • 3/4 C. raspberry jam

Mix together the sugar, flour, oats, salt and butter until a meal-like consistency forms. Press 1/2 of the mixture into a 6x9" casserole dish. Add a layer of the jam. Top with the remaining mixture and press into a firm layer. Bake at 325 degrees for 40 minutes. Allow to cool and cut into squares.

Yield: about 18 squares

  • I changed this recipe by using Splenda brown sugar blend, 1/8 tsp salt and "Just Fruit" raspberry spread. Any house brand will do. I also cut back a little on the butter and used no salt butter. It was delicious and really cut down on calories. My guests raved about it!
