English Tea Cakes - English Sugar Cookies

These cookies are a cross between a cookie and a cake - they can be cut into shapes and frosted or dusted with powdered sugar. They are really good with a cup of tea or coffee any time of the day.

Ingredients

  • 1 C. butter
  • 2 C. sugar
  • 4 eggs
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 4 tsp. baking powder
  • 4-6 C. flour
  • cookie frosting or powdered sugar

Directions

Cream together butter and sugar. Add eggs one at a time beating after each addition. Add salt, vanilla and baking powder and beat well. Add flour in thirds, beating after each addition. You want a dough that can gather all of the dough from the bowl forming a ball but it should not be dry or sticky. Flour the board and roll out the dough to desired width. Cut into your favorite shape.For crisper cookies, cut dough into 1/8-inch thick slices. For softer chewier cookies, cut dough into 1/4-inch thick slices. Lay out onto cookie sheet

Cook for 10 minutes at 375 degrees. Do not over bake! Take them out as they begin to barely brown. Frost or place in plastic bag filled with powdered sugar to coat.
