Enrichment Chicken

Creamy, Italian-seasoned chicken is slow-cooked and served over a bed of penne pasta.

  • 3-4 chicken breasts
  • 2 pkg. dry Italian seasonings dressing mix
  • 2 cans cream of chicken soup
  • 2 8 oz. Cream cheese
  • 1 (16 oz) pkg. penne pasta cooked

Cook in crock pot the chicken and soup all day until chicken is tender and falls apart. One hour before serving, pull out chicken and tear into bite-size pieces. To the soup in the crock pot, add cream cheese cut into little pieces and the Italian seasonings and mix well until cream cheese is melted and all is blended together. Add chicken and let simmer in crockpot for one hour. Serve over pasta. This is my grandson’s favorite dinner.

  • This is an awesome recipe that I have been making for years with 2 changes. I add fresh mushrooms to cook the last hour and I serve over a small serving of mashed red potatoes. It's great with any vegetable and a salad to top off the meal. (This recipe was been a weight watcher recipe - that's where I got it years ago). I take the leftover gravy and freeze it, then next time I make it I only add 1 can of cream of mushroom, some italian seasoning (from a grinder) and 4 oz cream cheese.

  • I add fresh mushrooms to it when you cook it for the last hour and serve it over mashed red potatoes. My husbad loves it and he's very picky...

  • This is positively delicious! I stir in the cooked pasta after the cream cheese is melted. Blanched broccoli florets make a nice addition too.
