This is a cheesy copycat version of Taco Bell's chicken quesadilla. When a recipe is enhanced with fresh vegetables and plenty of cheese how can you go wrong? Succulent chunks of chicken are browned, infused with taco seasoning, and mixed with a homemade sauce. The spicy chicken is then layered on top of a tortilla and seared, creating a cheesy masterpiece.

  • Sauce:
  • ¼ C. mayo
  • 2 tsp. jalapenos minced
  • ¾ tsp. granulated sugar
  • ½ tsp. cumin
  • ½ tsp. paprika
  • 1/8 tsp. cayenne pepper
  • ¼ tsp. salt
  • Quesadillas:
  • 4 flour tortillas
  • 4 boneless skinless chicken tenderloins
  • 1 C. shredded mild cheddar cheese
  • 1 C. shredded Monterey jack cheese
  • 4 slices American cheese
  • 1 C. black beans
  • 1 C. corn

Cook chicken in a skillet with olive oil until browned. Cut into small bite size chunks. Combine all the ingredients for the sauce and mix until smooth. Heat a deep skillet over medium heat. Lay a tortilla in skillet and sprinkle ¼ cup of shredded cheeses and a slice of American cheese on one side of the tortilla. Top with ¼ cup of chicken, corn and black beans and spread sauce on the empty side of tortilla. Fold over and press softly with spatula. Cook until cheese is melted and cut into 4 slices. Repeat for the rest of tortillas. Serve warm.
