Everything Omelet
Ingredients
- 3 eggs, beaten
- salt and pepper to taste
- 1/2 red onion, thinly sliced
- 1/2 sm. green bell pepper, sliced
- 1/2 sm. red bell pepper, sliced
- 3 slices turkey bacon, chopped
- 3 slices smoked turkey, chopped
- 2 Tbs. imitation butter
- shredded non fat cheddar cheese
Directions
Heat butter in non-stick pan. Add onions and red and green pepper and cook for about a minute on medium heat or until vegetables are tender. Add turkey bacon and turkey and cook for a few seconds, then add eggs, salt and pepper to taste and shredded cheese. Fold over after a minute or so and cook until eggs are fully cooked. Top with more shredded cheese if desired.
