Everything Veggie Seafood Salad
Ingredients
- Choose your favorite veggies:
- broccoli, cauliflower, carrots, red onions, scallions, baby corn, tomatoes, yellow peppers, cucumbers, pepperoncini, spinach, mushrooms, bean sprouts, asparagus (chopped into bite size pieces)
- Choose your favorite seafood:
- shrimp, crab, scallops (cooked and chopped)
- Dressing:
- 1 C. mayonnaise
- 2 Tbs. dill pickle juice or vinegar
- salt and pepper
Directions
Prepare a day before serving. In a large bowl, take all the vegetables that have been chopped into bite size pieces and mix. In a small bowl, mix together mayonnaise, pickle juice (or vinegar) and blend. Add salt and pepper to taste. Pour mixture over vegetables. Refrigerate overnight and add 1 lb. cooked seafood the next day.
