Everything Veggie Seafood Salad

Use your favorite fresh veggies and a seafood of your choice in this delicious salad!

Ingredients

  • Choose your favorite veggies:
  • broccoli, cauliflower, carrots, red onions, scallions, baby corn, tomatoes, yellow peppers, cucumbers, pepperoncini, spinach, mushrooms, bean sprouts, asparagus (chopped into bite size pieces)
  • Choose your favorite seafood:
  • shrimp, crab, scallops (cooked and chopped)
  • Dressing:
  • 1 C. mayonnaise
  • 2 Tbs. dill pickle juice or vinegar
  • salt and pepper

Directions

Prepare a day before serving. In a large bowl, take all the vegetables that have been chopped into bite size pieces and mix. In a small bowl, mix together mayonnaise, pickle juice (or vinegar) and blend. Add salt and pepper to taste. Pour mixture over vegetables. Refrigerate overnight and add 1 lb. cooked seafood the next day.
