Ingredients
- 4 large yellow potatoes, julienned
- 2 Tbs. olive oil
- 2 Tbs. fresh thyme
- 2 Tbs. lemon juice
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic salt
- 1 tsp. Italian seasoning
- 1 large carrot, julienned
- 1 (14.5 oz.) can green beans, rinsed and drained
- 1 (8 oz.) can sweet corn, drained

Directions
Microwave potatoes on high for 5-6 minutes on each side. Let potatoes cool for 5-10 minutes. Cut into cubes. In a medium mixing bowl, mix olive oil, thyme, lemon juice, salt, pepper, garlic salt and Italian seasoning. In a large skillet, sauté potatoes and carrots with olive oil mixture for 2-3 minutes. Add beans and sweet corn. Continue cooking, stirring occasionally for 5-6 minutes.
